The first study globally to track exposure to five groups of carcinogenic, immuno-depressive mycotoxins in food commodities was recently designed and directed by a UJ researcher

Mycotoxins occur widely in fresh and stored foods. These natural carcinogens significantly affect human, foetal and animal health, particularly in rural areas. Recently a UJ Food Safety researcher designed and directed the first comprehensive study of mycotoxin exposure in people and published the results in the high-impact journal Food and Chemical Toxicology.
